1984 marked the initial introduction of Circulon Cookware which was created by Meyer. This original nonstick and hard anodized cookware were the first ones in the industry to combine both the incomparable strength and even heat distribution attributes of hard anodized aluminum together with a long lasting nonstick system thus creating a unique kind of cookware. The concept of the now commonplace hard anodized and nonstick cookware was born. Consumers, for the first time, were able to enjoy the convenience of the nonstick pans not to mention the same features and the performance that a professional gives. Circulon cookware revolutionized the cookware industry through their claim of “Food won’t stick for 10 years”. Such a claim or guarantee was unheard of before Circulon was launched. In fact, today, the Circulon sets come with a lifetime satisfaction guarantee.

Currently, Circulon has also introduced its newest innovation. The Infinite Circulon which is the only hard anodized nonstick cookware set available in the market that is actually dishwasher safe. Besides that, it also offers a breakthrough in engineering with its high impact bonded stainless steel mixed with aluminum base which allows the person to use it with all kinds of burners which includes the popular glass and the very professional style induction cook tops. Unlike most pans, Circulon pans feature nonstick exteriors. Thanks to the proprietary technology used in its creation which allowed the nonstick coating to be applied on both the inside and outside surfaces of the pan. Making cleanup very easy as well as protecting the pan from chipping or scratching. This technology makes sure that your Circulon set would look beautiful for years and years to come.

Cast Iron »

Cast Iron Cookware is very versatile as well as very economic cooking options when compared to the expensive copper or copper clad cookware. Besides being inexpensive, cast iron cookware also has several other advantages over the other types. This kind of cookware has excellent heat conduction as well as retention. This means that the heat is spread evenly throughout the entire surface of the pan. If the ones you have have no wooden handles then you can also use it in the oven. Another important thing to note is that when it is well cared for, a cast iron pan can become just as non-stick as the other fancy pans. I’m sure you already know about how durable a cast iron pan is, in fact, most of you might have some that were handed down from your grandmother’s kitchen that still work like brand new. That’s how durable these things are.

But of course, there are always two sides to a story and where there are advantages there would also be disadvantages. A cast iron pan or skillet can be very heavy and if they are not cared for properly they are very prone to rusting. They are also not dishwasher safe which is a huge downside for people who don’t really have the time to hand wash their cookware. It might seem that they require more maintenance compared to other pans which is true but not by much. Another thing to remember is to never cook foods that are acidic in a cast iron pan. This is because cast iron is an extremely reactive metal and will definitely react to the acid in the food.

Le Creuset »

Le Creuset Cookware is created from enameled cast iron which has been in use since the middle ages. The factory that produces these fine cookware products is located in Fresnoy Le Grand in the North of France. 1952 saw the beginning of production for cast iron cookware by Le Creuset. The cast iron which is used in the cookware is made through hand casting molten cast iron in various sand molds, one of the most delicate stages of the production. Even today, in more modern times, after every casting the mold is completely destroyed and the cookware produced is then polished by hand. After which, it is scrutinized further for any imperfections. After passing the check, they are then sprayed with double layers of enamel coating and then fired after each coating.  The firing process, at 800 degrees Celsius, makes the enamel durable and hard creating a coating which protects the pan from damage.

Le Creuset Cookware is also very energy efficient. Because of the use of cast iron which is among the most energy efficient materials you will find. Basically, after the pan becomes hot enough, you can turn the heat to a lower level and yet maintain the cooking temperature needed to cook your food. In fact, for some recipes and food types, you can completely turn the stove off and the pan would still continuously cook your food. It is also very hygienic and is completely impervious to all sorts of acids or chemicals that the food might release during cooking. Besides being perfect for cooking it can also hold cuts of meat for marinating. You can also use it to store foods, whether they are raw or not, in the freezer. Which most pans can’t do.

Buying Guide, Calphalon »

[24 Aug 2010 | No Comment | 597 views]
There’s more to cooking than recipes, ingredients and the cook’s talent, the quality and type cookware plays a significant part. The success of a dish, including the speed and thoroughness with which it is cooked can depend to a great extent on the choice of cookware. Furthermore, in today’s society, there is an ever increasing choice of cookware on the market which not only gives you an excellent choice, but also allows you to choose according to the design and feel of your kitchen. With this in mind, below is a concise guide to the strengths and disadvantages of materials used in the pots and pans available in today’s market.

Aluminium

Aluminium is an excellent heat conductor but on it’s own it does tend to warp and give uneven heat. However, it is being increasingly used in ingenious ways to take advantage of its heat conducting properties. Both in Tri-ply cookware and the excellent SKK Premium range of products. These have a titanium base which is forty times harder than stainless steel and a non-stick surface. They are used by Delia Smith and have been described as the “best non stick pans ever” by the Independent newspaper. The only downside, and this depends on whether you are a purist or not, is that they are not dishwasher safe ( although they are very easy to clean) and can’t be used on induction hobs, although they will shortly be releasing a range which will

Cast Iron Cookware

Cast-iron cookware will last you a lifetime, probably remaining in good condition for your next generation too. It is an ideal heat conductor, and the saucepans and casseroles are coated with an enamel primer to seal rims. It can be used both on the hob and in the oven making it extremely versatile. The woks, grills and frying pans facilitate virtually fat-free cooking and are excellent for healthy low fat cooking, something we all need today. Food glides over it. It doesn’t warp and cleaning it is effortless and is dishwasher safe. For the frying pans etc to achieve optimum performance you may have to season it. Cast iron cookware has an excellent, heavy feel to it and with two of the leading brands, Le Creuset and Chasseur you have an range of colours to choose from to suit your kitchen. Whilst viewed as a more traditional product to fit traditional kitchens, a wider range of colours, including pink and kiwi, have recently been released.

Copper Cookware

Copper has been a favoured metal for cookware over the centuries. A remarkable heat conductor, copper utensils perform excellently, distributing heat evenly. They are durable, resisting denting and warping. However, they tend to react with acidic food if the coating is too thin. They may also get scratched or discoloured and it is not recommended that that they used in the dishwasher. But most of all, copper ensures quick cooking, and in comparison to cast-iron they are lighter to handle and are attractive to have hanging in the kitchen.

Stainless Steel Cookware

Extremely durable, good looking and easy to maintain, stainless steel cookware is dent and scratch resistant, and is safe to cook any kind of food. It is popular because it has an attractive smooth finish which comes in many styles including mirror finished and is easy to clean (most stainless steel cookware is dishwasher safe and many on the Blueshoots website has been approved by Finish) making it a favourite in many households. Although it might lose colour or become prone to pitting resulting from salt or brine exposure, it still holds water due to its non-porous quality. When looking to buy stainless steel cookware look for it to be manufactured with high quality heavy gauge stainless steel and to have hot forged bases with a good thickness between 5.5mm to 6.5mm which provide more even heat distribution. Any heavier and it can make the saucepan and frying pans too heavy and any lighter it is likely to warp. Key players within the stainless steel market are Stellar, Judge Vista and Meyer.

Tri-ply Cookware

Soft metals such as copper and aluminium are, in some cases, susceptible to tarnishing. To combat this, tri-ply cookware has recently come onto the market, making a significant impact. To put it simply, the whole pan is made with a sandwich of materials, with stainless steel on the inside and outside and either copper or aluminium sandwiched in the middle. This helps increase the durability of soft metals whist retaining their quality as superb heat conductor. In short, Tri-ply cookware heats the pan more quickly and retains the heat longer, so much so that in some instances the performance is so energy efficient that the heat source can be turned off before cooking is completed, making it very economic on the hob. In some instances, they are priced higher because of their superior functionality and appearance. Some of the key brands in this market are Le Creuset, Stellar Lamina, SKK and In-range

Hard Anodised Cookware

Non-stick interior, long lasting durability, ability to evenly spread heat across the base and safe to cook any kind of food, the advantages of hard-anodised cookware are plenty. Twice as strong as stainless steel, hard-anodisation process hardens the cookware structure, making it highly abrasion resistant. It is good looking, often oven safe and many ranges are suitable for induction cookers. Brands include Jamie Oliver, Analon, Stellar and In-range. Hard anodised cookware is one of the fastest growing cookware products today.

Each cookware type has its own set of benefits, ranging from heat retention, heat distribution to weight and their look and feel. Ultimately, good quality cookware will cost more than you standard day-to-day cookware, it will enhance the meal you are cooking, will be a pleasure to cook with and most likely easier to clean. Furthermore, with the increasing choice of cookware available, you now have a greater choice to buy the type of cookware that not only reflects your needs but also the style of your kitchen and what type of statement you wish to make.
